Latest coverage only

In an effort to reduce the size of the cloned workspace, the docs directory has had all of the coverage data removed, except for the 2020-12-15 regression. Functional RTL Freeze waivers are still available. The cv32e40p_v1.0.0 tag of this repo contains all of the coverage reports, dating back to 2020-10-23.

This is something of an interim solution. In the future, the coverage reports should find a permanent home outside of this repository.
