fix: Add spec_project field
requested to merge zacharysabourin/eclipsefdn-profile-api:zacharysabourin/main/spec_project_field into main

The MR adds the can_contribute_spec_project field that was missing from the final return. The logic for this field is the same as the ECA
It also adds many of the other missing fields from the original drupal endpoint
