Added documentation in various places

Hi, I have worked with the AAS for a bit, and have come up with some useful documentation that I want to contribute to the project.

At Stackable we have also built a demo with the AAS and multiple users that might be interesting, specifically we mocked the TSA as a separate REST service and used the AAS with the prod profile. The TSA mock is here - is there any interest to contribute this to the project as well?
