Add ninja to prerequisites for build docu

As mentioned here mantle-api!95 (comment 1141907), the docu has to include ninja as required binary package, too (see https://www.eclipse.org/openpass/content/html/installation_guide/20_install_prerequisites.html#installing-the-binary-packages)
