Update the Checksums section of the packages

While gathering feedback after the Drupal 10 migration, it was brought up that the checksums section is out of date.

• it misses many platforms (non x86-64 ones)
  • For example, Aarch64, Riscv64
• labels are too short, says "64-bit" but doesn't say which 64-bit one it is.
• calls mac by the old name (Mac Cocoa -> macOS)
• doesn't link to latest sha512 files (it only has sha1 and md5)
