Define MongoDB backup strategy

To protect ourselves from data failure/loss, a backup strategy should be defined for the MPC DB. There are a few options defined by Mongo within their documentation.

As I am still somewhat green to sysadmin, I'm looking for feedback as to which strategy would work best for our on-prem deployment.
