gateway-node: move over to eclipse and bump revision

Bartosz Golaszewski requested to merge brgl/meta-oniro-blueprints-gateway:brgl/port-to-kirkstone into main

This moves the node recipe to using kirkstone. We need a couple fixes that are now part of the node repo and also must no longer pass the custom paths to zephyr modules.
