doorlock: usb console regression

jasmine/dunfell version shows logs on USB console, not the goofy/kirkstone one

In other channels I've been told that @brgl uses TX/RX pins for logging/debugging using extra USB/UART link

Same using west using zephyr head (I'll try to bissec to find when regression has been introduced).
