Add missing audit log assertions to existing requestor tests

Related to #9 (closed).

After developing the generic audit log functionality and assertion functionality in gaia-x/data-infrastructure-federation-services/not/notarization-service!9, we need to ensure all the requestor operations are correctly audited by adding appropriate assertions to the existing/new tests.
