Reduce dir depth by moving "doc", "include" and "test" to the root dir // follow common FOSS project conventions

The CPM.cmake Wiki does a great job at collecting common FOSS project conventions. I strongly believe the principle of least astonishment (POLA) to be a major factor in FOSS adoption, so it would a good idea to try and follow these conventions.
