Update ESCET security information for Eclipse Foundation's Security Policy 1.2
Recently, the [Eclipse Foundation's Security Policy 1.2](https://blogs.eclipse.org/post/mika%C3%ABl-barbero/introducing-updated-eclipse-foundation-security-policy) was released. The 'Eclipse Foundation Vulnerability Reporting Policy' was renamed to 'Eclipse Foundation Security Policy'. We should update the `SECURITY.asciidoc` in the root of the ESCET repo.
