P2: Deploy CODECO (on KinD)

Description

Deploy CODECO on KinD using the main README of CODECO.

Fill the following checklist as well

Working in KinD

• Managed to deploy CODECO using the main README file in ECL.
• All pods are in RUNNING state.

Validation in KinD

• All pods have the expected logs.

In case of Errors

Document the errors in this issue and subsequently convert them into issues within the relevant ECL CODECO projects. Add the later issues as blockers to this one. Tag or assign @karamolegkos on the new issue.
