Missing data extractor for step 3 of quick start guide

Currently, the data-extractor directory only exists for the v1.0.0 tag but not in the main branch of the Synthetic Data Generator. We were able to successfully test step 1 and 2 of the quick start guide in the README.md but are wondering how the dummy metrics are supposed to be collected in the main branch if there is no data extractor that interacts with those components. Specifically, we are wondering how step 3 was intended to work.

3. Deploy CODECO’s Synthetic Data Generator (branch: main)

• Follow the setup and execution steps in the README.
• Collect the dummy metrics. These act as a baseline for extending and improving the data generation process.
